You’ll enjoy this great baked ziti recipe from the Williams Sonoma Kitchen.

BAKED ZITI

Ingredients: 4 tsp. plus 1 Tbs. olive oil – 3/4 lb. sweet Italian sausage – casings removed – 1 small eggplant – cut into 1/2 inch cubes – 1 yellow onion, chopped – 3 garlic cloves, minced – 1/2 cup dry red wine – 1 can (28 oz.)  crushed plum tomatoes with juice – 5 oz. ziti – cooked until al dente – 1/4 cup chopped fresh basil – 1/3 cup rinsed chopped Kalamata olives – 2 1/2 cups shredded mozzarella cheese – kosher salt and freshly ground pepper to taste – 1/2 cup grated Parmigiano Reggiano cheese.

Directions:  Position a rack in the upper third of oven – Preheat to 400 degrees.

In a 10-inch non stick fry pan over medium heat – warm 2 tsp. of olive oil – add sausage and cook – stirring and crumbling with wooden spoon until browned (15 min).  Transfer to a paper towel lined plate.

Discard all but 1 tsp. of the fat in pan – Set the pan over medium high heat and warm 2 tsp of olive oil – Add the eggplant and cook stirring until tender and browned (6 min). Transfer to a large bowl.

Set the pan over medium heat with remaining olive oil – Add the onion and cook until softened (5-6 min) – Add garlic and cook (1 min) – Add wine, increase the heat to medium-high — bring to a boil – stirring and scrape up the browned bits.  Cook until liquid is almost evaporated (3 min) – Add the tomatoes and their juices and simmer until thickened (10 min) – Add the sausage, pasta, basil, olives, 2 cups of Mozzarella, tomato sauce to the bowl with the eggplant.  Season with salt and pepper.

Transfer the pasta mixture to the fry pan and sprinkle with remaining 1/2 cup mozzarella and Parmigiano Reggiano.  Cover the pan and transfer to the oven and bake (25 min).  Uncover the pan and broil at 500 degrees for 5 minutes.  Let stand for 10 minutes.  Serves 6

Love – Emily Blunt and John Krasinski – Villa d’Este – Como, Italy

Golden Globe winner, Emily Blunt, and John Krasinski from “The Office”, were married Saturday in a beautiful private outdoor ceremony at Villa d”Este in Como, Italy. Blunt wore a Marchesa cream chiffon sweetheart gown, and her ring is a 3 carat Edwardian diamond and platinum ring from Neil Lang.

Villa d’Este was built in 1568.  The 25 acres of gardens, statutes, and landscape have been photographed for centuries, and the property is surrounded by the breathtaking Lake Como. This 16th Century Villa is one of the world’s leading destinations, and is highly praised for its gardens, award winning cuisine, luxurious rooms, impeccable decor, and first class service.

I was fortunate enough to visit Villa d”Este a few years back, and without a doubt, it is a spectacular location for a destination wedding.

Love – Nicole and Joshua – Hummingbird Nest Ranch

Our Little Lady Nicole is all grown up. The new Mrs. Robinson had the most memorable wedding day at the Hummingbird Nest Ranch in Simi Valley, California.  The location served as the perfect setting for Nicole’s desire to have a romantic garden themed wedding.  She and her groom exchanged their wedding vows under canopied olive trees, and their reception followed on the beautifully terraced grounds of this romantic setting.

Future posts will follow on Nicole and Joshua’s day, but we wanted to share a quick peek of some of the photographs taken by their photographer, Lukas Van Dyke.

In April, we posted about this annual challenge, and here is the winner of Cheap Chic Weddings. com 6th Annual Toliet Paper Wedding Dress contest.  Galit Zeierman of Israel, grabbed (or glued) the $1,000 grand prize.

Her design is complete with spaghetti straps and a bird-adorned headpiece.

We are also quite fond on this beautiful creation by the second place winner, Ericka Andrade of Winnetka, California.

Lectures – Association of Bridal Consultants – Seminar

The Association of Bridal Consultants held a continuing education seminar today at the Westlake Village Inn.  As a bridal consultant, it is important to stay current on trends and professionalism within the industry. Since these seminars are held across the country, I was fortunate that my own neighborhood was selected for this informative seminar.

The Westlake Village Inn was a beautiful backdrop for this day long gathering of Association members.
